Ingredients:
4 chicken breasts cubed
1 egg
2 c flour
2 tbs cornstarch
olive oil
CUBE chicken, dip in egg and a little water.
MIX flour and corn starch and coat chicken pieces.
COOK in 1 inch olive oil.
Sauce:
2 cans pineapple chunks
1 c sugar
1/2 c ketchup
2 tbsp. corn startch w/ a little water
1+ tbsp lemon juice
COOK together, then add chicken
SERVE over rice.
